These are just as good if not better than shop brought ones and makes a lot too.
12oz self raising flour
pinch of salt
7oz caster suger
1tbs ground ginger(must admit I add half as much again)
1tsp bicarbonate of soda
4 1/2oz butter
2 3/4oz golden syrup
1 egg beaten
1 tsp finely grated orange rind
1 lightly grease several baking trays
2 sieve the flour,salt,sugar,ginger and bicarbonate of soda
3 heat the butter and golden syrup together in a saucepan over a very
low heat until all the butter is melted
4 leave to cool slightly, then pour it onto the dry ingredients
5 add the egg and orange rind and mix well
6 using your hands place carefully shape the dough into 30 even-sized
balls
7 place the balls well apart on the prepared baking trays, then flatten
them slightly with your fingers
8 bake in preheated oven 160C, 325F, Gas Mark 3 for 15 - 20 minutes,
then transfer them to wire rack to cool.
Place into airtight bags (suck all the air out) and these keep for over a week
Nice in bed in the morning with a nice cup of tea |
